Zunyi mutton powder

There are two essences of eating mutton noodles in Zunyi. One is coarse powder, and the other is chili pepper and fish fragrant leaves. Goat has been abundant here since the Ming Dynasty, and the bosses have long been familiar with the processing of mutton. The original soup boiled for 4-5 hours makes the mutton delicious; The slight coolness of mint adds a hint of fragrance to the spiciness of the mutton noodles. Chili peppers are the standard accompaniment to mutton noodles. Locals put a few tablespoons directly into the bowl, add a plate of kimchi and a few garlic cloves, and it's all done. Zunyi also holds the "Mutton Noodles Food Festival" every winter solstice. In the Phoenix Mountain Square, a super big pot is set up and tens of thousands of people eat noodles. This feast is probably only seen in Zunyi.

Tofu noodles

In Zunyi, the status of bean curd noodles should be second only to mutton noodles. The smooth and tender tofu pudding and the wide alkaline noodles soaked in soy milk are a bit surprising and exciting at the same time. The bean curd and noodles served have a light bean flavor. If you want to whet your appetite, you have to dip it in water in various ways. The recipe for dipping the bean curd noodles in water is kept secret in every restaurant, but they all have to use oily chili as a base. Red oil is floating on the noodle soup. Pick a few noodles and dip them in the water to mix them. It's hard to think whether they taste good or not.

Spicy Chicken

For spicy chicken, the chicken must be cut into 5 cm cubes evenly, not too big or too small to be tasty. The heat is very important, use different fires at different times. Turn the spoon, add oil, stir-fry quickly, and stir-fry until the chicken is soft and glutinous and the pepper is sticky to the meat. The chicken shop owner knows this very well. Chili is the secret to the delicious spicy chicken. Add ginger, garlic, etc. and mix according to the secret recipe to make glutinous rice cake chili, which gives it this unique spicy taste.
