Wenzi Zhubing, originating from Wenxi County, Yuncheng City, Shanxi Province, China, is ranked first among the "Eight Famous Pastries of Shanxi" and hailed as the "King of Pastries". This round, white sesame-coated delicacy resembles a full moon with a frost-like luster, serving as a sweet symbol cherished in southern Shanxi for over 300 years. Despite its name literally meaning "boiled cake", it is not cooked in water—instead, the name derives from the southern Shanxi dialect, where "fry" is referred to as "zhu" (boil).

The history of Wenxi Zhubing dates back to the late Ming and early Qing dynasties, spanning more than three centuries, as documented by the Yuncheng Municipal Bureau of Culture and Tourism. Legend has it that during Emperor Kangxi’s inspection tour passing through Wenxi, local officials and gentry hosted a feast. Among all dishes, this fried pastry stood out for its crispy, sandy texture, sweet flavor, and lingering aftertaste. When the emperor asked about its name, everyone was lost for words. Emperor Kangxi smiled and said, "Let’s call it Zhubing (Boiled Cake)", and since then, its reputation has spread far and wide. Lu Xun also mentioned it in his work "Wanderings", proving that it had already gained nationwide popularity a century ago.

In 2009, the production technique of Wenxi Zhubing was included in the list of Intangible Cultural Heritage of Shanxi Province. Adhering to traditional methods, its production involves more than 20 elaborate processes, including "three soakings and three steamings" for filling preparation, dough kneading, shaping, low-temperature slow frying, honey dipping and glazing, and rolling in white sesame seeds. Every step is meticulously executed—especially temperature control and syrup boiling, which rely entirely on the experience of master craftsmen. Only through such rigorous craftsmanship can the pastry achieve its unique texture: a crispy outer crust and a soft, dense filling.

The flavor of Wenxi Zhubing embodies the gifts of southern Shanxi’s land and water. When broken open, its chestnut-colored sugar coating and red-and-white filling reveal distinct layers, with shiny honey threads stretching 3 to 6 centimeters long. Upon tasting, it offers a crispy yet tender texture—non-sticky, non-tough, and pure in sweetness. It blends the delicate aroma of sesame seeds with the rich mellow taste of honey, growing more flavorful with each chew and leaving a lasting fragrance. Additionally, it boasts excellent preservability, retaining its color, aroma, and taste for 100 days without deterioration, making it a natural and portable delicacy.

In Wenxi and southern Shanxi, Zhubing is an indispensable treat for festivals, a premium choice for receiving guests, and a staple gift for visiting relatives and friends.
