China's vast territory, diverse climates and landforms, as well as distinct customs, have gradually given rise to widely recognized regional specialty cuisines across different areas. Initially, the most famous cuisines were Cantonese, Jiangsu, Shandong and Sichuan cuisines. Later, Anhui, Fujian, Hunan and Zhejiang cuisines were also included, forming the well-known "Eight Great Cuisines" as we know them today.
